The Aube, Reimagined

Dinner to Discover the Wines of the Côte des Bar

Tolo | 135 Division Street, New York, NY 10002
$295 + tax | Sold Out

Exclusively for American Express Centurion® and American Express Platinum Card® Members on Resy

Please note that this dinner will take place in the private dining room downstairs at Parcelle Wine Bar at 135 Division Street, New York, NY 10002)

A hotbed of some of the most exciting winemaking happening today in Champagne, the Aube and its viticultural area called the Côte des Bar can feel like a world away from the “classic” subregions of Champagne, both in distance, around two hours south of Reims, and in terroir, boasting Kimmeridgian soils like in Chablis. While one might be forgiven for thinking that the Aube is Chardonnay country, Pinot Noir is king here, making up more than 85% of vines planted. Historically, the Aube sent much of its production north to the houses of Reims & Epernay. While that is still important to the region, a growing collection of young winemakers is redefining the image of the Aube, creating some truly amazing wines while breaking a few rules along the way.

Join us at Tolo as we kick off La Fête du Champagne with this special dinner showcasing the wines of  five of these young iconoclasts - Pierre Brocard, Vincent Couche, Pierre Gerbais, Thomas de Marne, and Etienne Sandrin - which will pair beautifully with the balanced, soulful flavors of Chef Ron Yan’s modern Chinese cuisine.

Please note that the winemakers will not be in attendance for this dinner.

Pascal Agrapart and his son Ambroise represent the fourth and fifth generation of their family to run this storied estate, established in 1894  in the Grand Cru village of Avize in the heart of Champagne’s Côte des Blancs. The Agrapart name is synonymous with excellence, and from their 10 hectares of vines mostly in Avize, the father and  son produce some of Champagne’s most refined and complex wines. We are honored to welcome Pascal and Ambroise to present a remarkable lineup of wines from their estate, including the fantastic 2012 and 2008 vintages of Agrapart’s three vintage-dated parcel selection cuvées - Minéral, Avizoise, and Vénus. We will then enjoy a rare taste of Pascal’s extremely limited cuvée, Expérience, that is made exclusively from grapes - no yeast, sulfur, or sugar are added at any point in the winemaking process. The evening will close with a trio of fantastic vintages back to 1985 poured from magnum. The wines will be paired  with Chef Chris Cipollone’s refined modern American cuisine at Francie in Williamsburg.
